Day 6

                    We first make our habits, then our habits make us!

 

I have that on my laptop as my wallpaper.  It is so very true.  I am feeling really good about my challenge.  It's becoming easier by the day.  My cravings are gone as are my bloating and fatigue.  Yay me!

Here are today's stats-



1.  Read the Daily Proclamation aloud each morning and night. done- Really trying to slow down in the morning and read every word. Done

2. Compliment someone each day and say nothing negative about anyone.   I had to compliment two people today due to missing yesterday.  I complimented a gal at Kroger tonight- she had an adorable purse!  I then complimented a gal at the gas station. I told her it may seem like she has a thankless job but without her, we couldn't go anywhere.  I told her how much I appreciate her!  She seemed shocked I would say that.  We need to say these things more!


3. Stop eating BEFORE you are full - no problem- Follow the special body cleansing program- I am eating a vegan diet. I am only allowed to steam my food. No cooking on the stove or microwave.    Today I did well-  I had a smoothie for breakfast.  I just mix a bunch of fresh and frozen fruit with water- delicious!!  For lunch, I steamed a veggie burger and veggies.  I am allowed a veggie burger a day as long as it has less then 280mg sodium.  I've been snacking on fruit and veggies all afternoon so I didn't officially eat anything for dinner. 

4. Do not get angry, curse or complain. Do not gossip about anyone- I did NOT curse today!!  Yay!!!! 

5. Give someone something material each day.- I wasn't going to go into detail about the gifts but I have changed my mind on that.  Hey it's my blog, I can  change my mind anytime....so anyway....I want to show how easy it is to make someones day with so little!  After I left Kroger tonight, I took a honey crisp apple to the gal at the gas station. I didn't know her and felt a little nervous before going in.  I was afraid she would think I was some weirdo.  (she prolly still did) I explained to her that I am doing a this challenge and I had something for her.  She was the one I complimented in #2 also.  I told her I used to work at a gas station and I know most of the time there is nothing healthy to eat there.  I gave her the apple.  She couldn't stop smiling!  She kept telling me how sweet and thoughtful that was.  She was outside doing the trash when I pulled up.  I remember doing that in the freezing cold.  It sucks!  That's why I told her how much we appreciate her.  Working at a gas station is a thankless job.  Everyone gets mad at YOU because of the gas prices but guess what!?  Everyone pays the same price!  Gas station employees don't get cheaper gas.  Just keep that in mind next time you grumble as you hand your money over to the clerk.  I felt great after leaving!  It made me think that I should give more people that I don't know gifts.  I had to give two gifts today since I missed yesterday.  I gave my step son's girlfriend a satin hands set from Mary Kay.  She wasn't nearly as excited as the girl with the apple but I think I would dig the apple more too.  It's all good.
 

6. Pray and read scripture for your age in minutes daily.- I pray for 11 minutes in the morning and 11 minutes at night. I also listen to an audio bible for 11 minutes in the morning and 11 at night.  My battery was dead when I got in the car as I was leaving Kroger.  I spend the time while I was waiting for a jump to listen to my audio bible.  I still listened to it when I got ready for bed.  I got a little extra in tonight, not because I had to but because I wanted to.  Bonus!

7. Drink half my weight in ounces of water.- done I have to drink 72 ounces of water. done!

8. If you are doing any of these stop. Stop flirting, having affairs, committing fornication, looking at pornography, or communicating with a person who is not your spouse.  Nope

9.  Wash my face before bed.  This isn't part of the challenge but I made it part.  I need to get back into the habit!  Done!

day 4 and 5

I know- I said I would post every night but the last two nights I have had a horrible headache. (not a complaint- just telling you why I didn't post)  I think it is from the new power of contacts.  My headache doesn't hit me until evening and I have been wearing them all day by then.  I'm really surprised I haven't been waking up with headaches from going through caffeine withdrawal.  I am doing fine without coffee.  That shocks me too because coffee is the first thing I do every morning. Turn my Keurig before I even make it to the bathroom.  I'm addicted.  When I smell flavored coffee, that is the hardest time for me.  LOVE me some flavored coffee.  When I originally was planning on doing this challenge, I made a decision not to cut coffee out, because I love having it in the morning so much.  But then the more I thought about it, I think that is the point of the challenge.  To overcome temptation, challenge and past habits.  This does not mean I won't drink coffee when I am off the challenge.  Wait, I just thought of something....I am taking advil for my hip so that may be why I am not having headaches in the morning.

Saturday I did well except for one thing....I cursed twice!  It just slipped out both times!  I didn't even realize I had done it the first time but my friend Summer caught me!  The second time, I caught myself.  Hmmm, maybe I curse more than I thought!  Guess what I did on Sunday- cursed once!  Yes, I need to work on that!  Here are my stats for the last two days.

Compliment someone each day and say nothing negative about anyone.  On day 4, I complimented two of my friends on their commitment of exercise.   I can see the progress over the last year. I did not compliment anyone yesterday because I had planned on going back out after I got home in the morning but the weather became too bad.  I was going to run down to the gas station but Cari had to go to work and said it was pretty slippery out.  So today, I will compliment two people.


3. Stop eating BEFORE you are full - no problem-   Follow the special body cleansing program- I am eating a vegan diet. I am only allowed to steam my food. No cooking on the stove or microwave. I realized I goofed in the beginning and it just didn't register! I made popcorn on the stove and I am not allowed to cook unless it is steamed. I read through some of the material again and realized I cannot use oil and vinegar. I was using that on my salad. Unintentional mistakes. I won't do it again. I am feeling so much better physically. I am starting to lose all my cravings for sugar! Whew!
 I went out to eat Friday night and was able to get a raw veggie tray as an appetizer and a salad with granny smith apples and walnuts.  It was delicious.


4. Do not get angry, curse or complain. Do not gossip about anyone- read ^ for the cursing.  I did both days!  Gah!  Have to try harder.  There is some drama going on in the family.  I am doing my best to stay out of it so I don't gossip or say anything I shouldn't.  Not easy.

5. Give someone something material each day.- I did give my gift on day 4 but not day 5.   I will give two gifts today.  I missed yesterday because of the weather.

day 3 and a trip to red lobster

    I am doing the 42 day challenge which you can find more info at do42.com  I have certain challenges I have to follow every day.  I am going to try to blog every night and tell you how my challenge is going.  I know this will probably be boring for you, but necessary for me. 
1. Read the Daily Proclamation aloud each morning and night.   done- I tend to read it REALLY fast in the morning because I am in such a hurry to get ready but I do slow down in the evening and take in each word.

2. Compliment someone each day and say nothing negative about anyone.  I complimented my daughter on her hair.

3.  Stop eating BEFORE you are full - no problem

4. If you are doing any of these stop. Stop flirting, having affairs, committing fornication, looking at pornography, or communicating with a person who is not your spouse or who is an ex.- not doing any of them

5.  Do not get angry, curse or complain.  Do not gossip about anyone- I'm not one to curse very much but, I said "hell" yesterday...slipped out.  Won't happen again.  Not complaining is hard.  I have to make a conscious effort not to complain.  Who knew I complained so much!  And gossiping....I will start to say, "did you hear...." but then I think ohhh I can't gossip.  Again, not easy!

6.  Give someone something material each day.- done  I don't think I really want to elaborate on this every day because I feel like it's not right.  I don't want to feel like I am patting myself on the back for doing a nice gesture. 
 

7.  Pray and read scripture for your age in minutes daily.- I pray for 11 minutes in the morning and 11 minutes at night.  I also listen to an audio bible for 11 minutes in the morning and 11 at night.

8.  Follow the special body cleansing program- I am eating a vegan diet. I am only allowed to steam my food.  No cooking on the stove or microwave.

I find it hard to not use other methods of cooking.  I accidentally warmed up an apple in the microwave because it was cold from the fridge and I'd rather eat it room temperature.  It didn't even phase me until the next day that I had used the microwave.  Things we do normally without thinking are hard to change.  I won't do it again though.  I am using my tea kettle to make hot water for my lemon water in the morning.  I'm not drinking coffee, which I thought was going to be very hard for me but surprisingly, I am doing well with it. 

I went to Red Lobster for my brother's birthday tonight.  Before I went, I researched online what I could eat.  I knew it would have to be a salad since I can't guarantee they steam anything.  I found one online that I could eat.  It had blue cheese on it so I was sure to tell the waitress no cheese.  I really wasn't tempted for anything else.  Even the cheddar biscuits which are DELICIOUS!!!  I was pretty excited that it didn't bother me as I am hoping being off sugar is going to make my brain stop these stupid cravings.  I have been craving chocolate something fierce!!

I was explaining to my daughter about the rules of the challenge.  I told her if I do something unintentional, it is forgiven and I can continue on the challenge.  However, if I intentionally did something I knew was wrong, I would have to start over.  (Hence the starting over on day 3 due to my yelling).  We made peanut butter balls and they looked and smelled sooooo good.  I stood there watching her eat one and I said how much I would love to try one.  She looked at me and in an instant shoved her half eaten peanut butter in my mouth.  She walked away and said "unintentional, you're welcome!" 

I love that girl!

I am really enjoying listening to my audio bible.  I always listen to more than 11 minutes.  I am also making a commitment to wash my face every day before bed.  I used to be really good about it but like everything else once I fall off the wagon, it's sooo hard to get back on.   I would be tired and just fall into bed not caring.  I would take time to brush my teeth but that would be it.  Now I listen to my audio bible while washing my face at night!  Perfect!  

I was starting to have trouble thinking of things to pray about.  I admit, normally my prayers are short and to the point.  This makes me really dig deep and pray about things that I normally wouldn't.  I like that.

I am going to post my daily weight to.  I actually started this challenge on the 21st at 146.1...this morning I was 142.7.

The meaning of Christmas

I failed my challenge already.  I made it to day 3.  I didn't fail because I ate something I shouldn't- which was a miracle because Cari and made peanut butter balls (dark AND white chocolate)!  I failed because I chose to get into an argument.  I was trying to stay as positive as I could but I could no longer hold my tongue. 

My argument was warranted in my mind and I couldn't hold it in any more.  When will we understand the meaning of Christmas?  When will we understand that it is NOT about how much or how little our money can buy?!  When will we understand Christmas is about our people.  Our people that surround us....our family, our friends and co-workers.  Christmas is about finding joy together from the year behind us and the year ahead.  It's about good food and better memories.  It's about laughter and spending time with the people you may not see every day. It's not about what I bought you or what I couldn't buy you this year.

Would you think less of me if I couldn't afford a gift for you this year?  Oh wait, if you are reading this, I probably couldn't afford a gift for you this year.

The next 42 days...

I am ready, ready to start the 42 day cleanse.  I am starting it today and it will go through January 31st, 2013.  I need positive in my life.  I need to cleanse my mind, body and spirit! 

I am committing to doing the 42 day cleanse. Here are the rules taken from do42.com

 
Basic Overview
  1. Read the Daily Proclamation aloud each morning and night.
  2. Compliment someone each day and say nothing negative about anyone.
  3. Stop eating BEFORE you are full
  4. If you are doing any of these stop. Stop flirting, having affairs, committing fornication, looking at pornography, or communicating with a person who is not your spouse or who is an ex.
    This helps to control the lust within you.
  5. Do not get angry, curse or complain.
    Do not raise your voice in anger. Don’t allow anything great or small to make you angry or react in anger. Do not complain about ANYTHING. Not the weather, not the government, not the news, not your aches, not your money, not your kids, your spouse, your job, your car, traffic or anything else.
    Do NOT complain about ANYTHING!
  6. Give someone something material each day.
    The size does not matter. Whether it is a dollar or a donut or buying someone’s lunch, You must give someone “other than your own children” something each day. At least every other day it must be someone OUTSIDE of your family. If you are member of a church, during this period you will give to your church as directed by your church. Concentrating on giving helps to control greed and realize your own blessings.
  7. Pray and read scripture for your age in minutes daily.
    Find this on the Age/Minutes chart.
    This helps to control spiritual laziness and to know the Word and Voice of God.
  8. Follow the special body cleansing program

Do’s

Don’ts

Do drink your water at room temperature, not cold.
Do Use bottled water if you cannot get distilled.
Do use garlic & fresh herbs
Do eat steamed & raw foods
Do eat lots of living fresh foods. Fruits, veggies, salads, nuts, smoothies …

One breath at a time

Today started out really rough for me.  I had a doctor appt at 6:30am in South Bend.  I needed to leave my house by 5:30am.  This is early but not a big deal for me as I'm up early daily- my alarm usually goes off at 4:30am every morning.  I slept through my alarm only to wake up at 6am.  It's weird because I had no idea when I opened my eyes that it was that late because it is still dark out.  I hopped out of bed, put my contacts in and got quickly dressed as I knew my dogs would be needing to go for their morning walk.  As I came downstairs my eyes were not focusing correctly.  I received new contacts yesterday.  I could tell they were not going to work as nothing was in focus.  We did our morning walk and I fed all the animals.  I tried to call the doctor but they weren't open.  How is that possible when I am supposed to be there right now?!  I felt like just crawling right back into bed!  On top of all that, I went to bed with a stomach ache and it was STILL upset!  I ate pizza for dinner and it did not agree with me.

I start to head back upstairs. We have gates in a couple doorways to keep the dogs contained in a certain are of the house.  These gates are not always compliant with opening and closing easily so I decided to step over the gate.  Did I mention that I just had hip surgery a week ago and I should NOT be lifting my leg up over that gate?  I get one leg over and my other foot catches on the top of the gate. Down I go straight on the ceramic tiles (no it couldn't be carpet).  My knees mostly take the impact.  I swear when I hit the floor the whole house shook.  I laid there accessing my injuries and hoping for someone to come to my rescue...I started to tear up then just started laughing. Really?!  This is how my morning is going to be?!  The dog started barking but no rescuers.  I wanted to grumble and complain so I texted my friend Berta.  Told her I overslept- missed my appointment. Her reply was that I must've gotten a good nights sleep!  I have not been sleeping well AT ALL!  She was right!  I slept good!  I starting thinking about how awful my morning was but then realized how lucky I am to be alive.  I am allowed a crummy start to my day but how I react to it is what matters.  I know there are a lot of funerals in Connecticut this week and my bad morning is nothing compared to the grief they are going through.

I took some long deep breaths.  Took a hot shower and an anti-inflammatory (thanks for the reminder berta).  Called doc to reschedule.  I was able to reschedule for later today.  Yay!   Called the eye doc and took care of the contact issue.  I was able to enjoy my morning without rushing around like a mad woman. 

One breath at a time.  One day at a time. 

Remember if you are having a horrible day...step back....take a moment.  We are allowed to be upset, to feel cranky.  But don't let it ruin the rest of the day.  Life is just too short.

Foodies Pen Pals AND We are not failures unless we stop trying.....

Hello friends,
 
It's been about five months since I have been on here.  A LOT has happened in five months.  As you can prolly see, I didn't finish my 42 day challenge.  Looks like I made it to day 3!  Big Woop!!  Actually, I think I made it a little farther than that but stopped blogging.  Things got kinda crazy in my life and I let the challenge go.  I felt like a failure for it for quite a while.  But the more I thought about it, the more I realized- we only fail once we stop trying.  I am going to try again.  I want to make sure it is the right time and that I can completely focus my time on it.  The time will be soon. 
 
There is another reason I stopped blogging.  I'm embarrassed to admit it.  I started reading so many other blogs and I realized my blog sucked.  It's true.  I felt like mine really wasn't good enough.  There are some really awesome blogs out there!!  Then I started thinking how unfair I was being to myself.  If one of my friends or clients were telling me something like that, I would be appalled.  We have to stop comparing our worst with everyone's best!  I know people benefited from my blog but I started telling myself otherwise.  Why do we do that to ourselves?  Why is it OK to trash ourselves but lift those up around us?!  I am going to do my best to be better to myself.  I am going to stop trash talking myself.  I do it more than I would care to admit.
 
Long story short....I'm back.  My blog may be boring and not nearly as fancy as others but it's me.  And I am fabulous :)
 
I always read my friend Erin's blog.  Check it out here.  She has written about Foodie Pen Pals.  I have often thought of doing it but never did.  Finally last month I signed up!  I am so happy I did!!

FPP post Foodie Penpals November Reveal Day

                Laurel check out her blog here was my foodie pen pal.  She sent me this wonderful array of items!

I told her I am a vegetarian and she sent me this  Becoming Vegan cook book.  I have always stood at the line of becoming vegan but I have a hard time crossing that line mostly because
 I. LOVE. CHEESE!  There I said it. I am a cheese nut.  I am sure I will be able to use many of the recipes until I decide if that line is worth crossing. 
 She also sent me a smoothie book.  I love the idea of different smoothies so this will help me get out of the rut of always having the same thing.  I am a lover of cook books too so these books will go lovely in my collection!
Besides being a cheese nut, I just love NUTS!  As we all know, nuts are calorie dense but we don't want to skip this healthy option of total yumminess.  I am thankful for the 100 calorie pack of nuts so I don't go overboard.  I keep a pack of these in my purse at all times because you just never know when you will need them.  The other box is strawberry mango fruit twists.  Can you believe these are CLEAN?! Yeah I didn't either until I read the box!!  They are by simply balanced, archer farms.  I've never had them but they are delicious!!  Each pouch is only 80 calories and they are perfect for stashing in my purse for times when I just need a little something.  She also sent me some Strawberry Spread that is made with ingredients you would use to make in your own kitchen.  I am a strawberry freak too so this is Perfect!!  (they used to call me strawberry shortcake when I was a tot...not only because of my red hair but my love for strawberries).  Laurel must have known my hands were extremely dry (stalker) jk-because she knew I needed some lotion.  She said it was her favorite and I agree- LoVe iT!  
 
Next month instead of foodie pen pals, we are donating to those victims of Hurricane Sandy.  I encourage you to donate!

The mind is a powerful tool!

This is day 3 on my 42 day challenge.  Check out my previous post if you are wondering what the challenge is, or you can check HERE!


This is what I have to do-



During this 40 day period for The 40 Day Miracle I , __Janet_ , pledge the following:

Number Two: I pledge that I will compliment someone each day and will say nothing negative about anyone.

1.  I honestly think the hardest part is reading that proclamation every morning and night.  That is  a mouth full!!  

2.  Complimenting someone is easy.  I am around a lot of people every day but I am specifically trying to complement people that I do not know too.  I went to Jimmy Johns to get my dad lunch on Sunday and complimented the cashier.  I told him I loved his curly hair!  

3.  I have been eating small meals of fruits and veggies so not getting full is easy.  Last night though, I did fail a little.  I had friends come in from out of town and we went to Albanos.  I ordered a salad and it was loaded with cheese (supposed to eat vegan).  If I didn't have the cheese on it, it would have been a pretty boring salad.  Since it was only day two, I didn't feel so bad about messing up.  But then again, day 1 and day 42 are as important and all the days in between.  Ok, ok, don't make me feel any worse! 

I am also supposed to drink about 70 ounces of water a day which is not a problem.  

The picture below has been my daily lunch.  I adore this salad.  It has spinach, romaine hearts, strawberries, pecans, tomatoes, avocados and sun dried tomatoes.  I am not allowed any dressing. Oh boo!



4.  I am not doing any part of number 4 so I'm good there.

5.  Saying nothing negative and no complaining goes easy for a while but then when you feel the need to vent...ummm not so much.  Sometimes I do state things without it coming out as a complaint but other times, I just bite my tongue.  I very rarely get angry and curse, so that part is easy for me. 

6.  Took my dad lunch with fresh cherries on Sunday.  He was inside by himself all day watching TV and I know he doesn't eat well.  I took him a veggie sub from Jimmy Johns.  I had a bad migraine Sunday (just stating a fact) and did not feel like running out to get his sandwich and taking it to him.  I just wanted to lay down.  However, I left his house feeling like I made a difference in his day!  I could see how happy it made him.  Yesterday, I gave a friend a basil plant.  I have one of my own and I know how awesome it is to be able to have access to fresh basil.  My friend is struggling with her weight and I thought this might help her enjoy some fresh summer salads with no guilt.  Today, I brought another friend two clementines and a banana.  I made a smiley face out of them.  I also wrote an note on the banana.  She inspires me to be a better person and I wanted her to know it.  I think this one of my favorite parts of the challenge.  It makes me think more about everyone around me and how I can find something small to brighten their day.

7.   I am having a hard time getting the prayer time in the morning.  I doubled up last night and I know that isn't acceptable so I will do my best to improve on that.  I am excited about the prayer time because normally my prayers are short.  I'm not proud of that but this does open my mind more to praying and being thankful for more things in my life and those around me.

My boyfriend Tommy is doing this challenge with me.  His hardest thing is the eating.  We can only steam our food and are not allowed any other form of cooking.  So far, we have only eaten our fruits and veggies raw.  I am going to get the new steamer out of the box tonight and make a portablella sandwich with it.  We are allowed one veggie patty a day as long as it is less than 280 mg sodium.  I will use some of my fresh basil, tomatoes and portabella mushroom caps.  We can do this!!  I am thankful Tommy is doing this with me.  It makes it much more bearable.  
Annette, Shelly and B are doing it too!  A big shout out to them as well.  Keep up the good work!!!

When we were going to Kroger on Sunday, Tommy was being tailgated by another car.  He said, "Yes, please drive a little closer to me, then maybe we can bump and have some friendly conversation."  Way to go Tommy.  Keepin it positive!!

Do you want to join us in this transformation?  Can't do all of it?  What if you just picked one or two things and tried that for 42 days?  I know you have it in you!  We just have to make up our minds and the mind is a powerful tool!!

This is only day three and I already feel a hundred miles away from how negative I was feeling!

Fall down seven times- get up eight.

It's been one month since I last posted.  What has happened you ask?  I hurt my back and couldn't work out for part of the month.  Instead of dealing with it sensibly, I did what anyone would do.  I couldn't work out so instead, I ate. And ate.  I was depressed and in pain so I ate. And ate.  


You know the ole saying, you eat like crap, you feel like crap?  Uh huh, I feel like crap, which only makes me more depressed and want to eat more!!  Huh?!  Why do we do this to ourselves?  


I get REALLY nervous when I am injured.  It's hard because I NEED my ENTIRE body to be functional in order to do my day to day classes.  I have a lot of women depending on me to be open so they can get their workout in.  In a perfect world, I would have another certified instructor to teach my classes and extra money to pay them!  NO worries right?!  Of course, all the "what if's" start running through my mind.  What if I have to cancel my classes and my customers started canceling?!  What if I let my clients down?  What if they are disappointed?  What if I go back to teaching too soon and re- injure myself?  We can play the "what if" game all day and get more depressed right?!  


I started making excuses for not "having time" to head to the grocery store, started eating out more and thus my journey began.  No I REALLY DIDN'T HAVE TIME- because I was watching Lie to Me reruns on Netflix.  True story.


I was TOO busy feeling sorry for myself to care about what I ate!  But I am here to tell you, I have fallen but I am getting back up.  I went to the grocery (because I watched all the seasons of Lie to Me and there are no more to see- true story) and I got a ton of VEGGIES!!!  Yahoo!!  Yippee!!!  I made delicious salads and some juices too!  I miss my juices!! 


So I am letting you all know-  I am only human.  I crave sugar. I eat sugar.  When I eat sugar, I crave sugar.  I hate myself for it.  I eat crap, I feel like crap.  


Enough of this pity party.   I'm declaring war against this funk I'm in!

Fresh Dressings.

Tis the season for fresh veggies and crispy salads.  I recently made some delicious dressings that I wanted to share!

Sundried Tomato Dressing
serves 4

1/2 cup Sundried Tomatoes
1 Clove Garlic
1 Bunch of Basil
1 Tbsp Lemon juice (I always use real lemons)
1/4 cup olive oil
sea salt and fresh pepper to taste

In blender, combine first four ingredients.  With the blender running, slowly add the olive oil.  Season to taste with salt and pepper.






This is DELICIOUS!!!!  This recipe is more like a pesto than a dressing but it works for SO many things.  I have used it as a salad dressing, as a pizza sauce, in pasta and mixed in cottage cheese.  It is simply amazing!!!


Here is another of my favorites-

Mustard Vinaigrette
serves 8

1/3 cup Apple Cider Vinegar
1 1/2 TBSP Grain mustard
2/3 Cup Cold Pressed Olive Oil
Sea salt and ground pepper to taste

Puree the vinegar and mustard in blender.  With the blender running, slowly pour in the olive oil.  Season to taste with salt and pepper.  If you would like you can add 3/4 TBSP of Raw Honey to make it Honey Mustard Vinaigrette.  Both of these dressing run about 150 calories per serving.  A little goes a long way!

Both of these dressing keep up to a week in the refrigerator. 

Have you looked at the ingredients of your bottled salad dressing lately?  Salad dressings can take your salad from a healthy nutritious meal to a fat and calorie laden heart attack!  Be cautious of portion sizing.

Potato Crust Pizza!



Clean Eating Potato-Crust Pizza!!   Now tell me that doesn't look YUMMMMYYYYYY!!!!!  Oh my gosh, this was the BEST pizza ever!  I recently went out to eat at a local pizza place.  I can't remember the last time I had eaten there and they have the BEST cheese rolls.  I'm sure they surpass my calorie count for three or four days but THEY ARE WORTH IT once in a while.  I should have however, stopped at the cheese rolls.  The pizza left little to be desired.  I have decided I am done eating take out pizza.  While I may not eat it often, I still can't remember the last time I actually enjoyed eating take out pizza.  


This recipe is from a Clean Eating email I received recently.  I did however, change the recipe slightly.  It called for eggplant which I had purchased but by the time I got to cook it, the eggplant was bad.  So I did what anyone would do, I used every other veggie in my fridge.  


Potato-Crust Pizza with roasted veggies


2 lbs white potatoes, scrubbed well
Whatever veggies you have on hand (or your choice of toppings)
8 ounces mozzarella cheese
1 tsp dried rosemary
1 tsp dried oregano


Place veggies in oven at 475 degrees.  Brush veggies with olive oil and bake 20 minutes or until veggies are tender.  (There is something about roasting veggies that brings the best taste out of each vegetable.)  While veggies are cooking, fill a large mixing bowl halfway with cold water- grate potatoes, immediately placing potatoes in water to prevent browning.
Line baking sheet with parchment paper or lightly mist with olive oil spray.  Working with one handful at a time, squeeze excess water from potatoes and place on a clean kitchen towel or paper towel.  Roll up towel, bend and wring any remaining moisture from potatoes.  Spread potatoes on baking sheet, creating about 1/8 layer thick.  Bake at 375 degrees for 20-25 minutes.  Once potato crust is baked, top with your choice of toppings- add mozzarella then rosemary and oregano.  bake for 20 more minutes, until golden brown. 


I had to force myself to stop eating after two slices.  This recipe didn't call for any sauce and to be honest, I didn't miss it.  I ended up using, red, yellow and green pepper, avocado, onion and tomatoes.  I will try this recipe again using sweet potatoes, basil pesto sauce and goat cheese instead of mozzarella.

Update on juice fast....

I survived my 15 day juice fast.  Sorry it took me so long to get on here and share with you.  Sometimes life just gets in the way. 


All in all, I really enjoyed the juice fast.  I love how it made me feel.  I felt energized and empowered by taking control of my health.  I loved having all the new veggies to try.  As time went on, the juice started to taste better.  I started to crave it.  I haven't had a juice now since last Friday and I am craving it now.  I have decided to continue juicing and having one juice a day.


Juicing helps the body get the maximum nutrition with the least effort on the body.  The body gets to rest during an all juice fast.  Juicing helps to detox the body and rid it of heavy metals, caffeine and toxins that hang around inside of us.  We get mucho vitamins, minerals, antioxidants and lots of water!  (Did I mention I had to pee A LOT?!)  Juicing also helps the body to heal and resets the immune system.  It is recommended to do an all juice fast every 3 months, 6 months or at least yearly.


I was very lucky that did not experience any detox symptoms except for a slight headache on day 1.  I lost 7 pounds but have regained 1 since I started chewing my food again.  The things I missed most were my morning coffee and my home made popcorn.  I haven't had any popcorn yet.  I'm afraid my digestive system is not ready.  It is important not to start eating like crazy when finishing a juice fast.  You must reintroduce food slowly or you will have major stomach upset.  I really like how I felt during the plant based diet and never lost my energy like I thought I might.  I am a vegetarian and have often entertained the idea of becoming vegan.  This 15 day fast made me realize it is doable.  I've often wondered how I could "live" without cheese.  Cheese never entered my mind during this time.  


My new favorite veggie is Kale.  I always heard a lot about it and "meant" to try it....but it never happened til I used it during my fast.  My new favorite way to have Kale is Kale Chips.  If you  have never tried it, I am insisting that you do.





Preheat oven to 350 degrees.  Wash and dry Kale. Pat dry or spin in salad spinner.  It is important that it is dry.  Cut the spine out of the Kale and cut leaves into bit size pieces.  I have a olive oil spritzer or you can put in bowl or gallon size bag.  Spritz kale pieces and toss so that all kale is covered.  Sprinkle with salt.  Bake for 10-15 minutes.  Watch them closely so they don't get burned.  I made two of these pans and ate them ALL!!!!!  Ditch the potato chips friends and try the Kale Chips!!!  Full  of nutrition and yummy goodness!!!!!

I survived!


I haven't chewed food for 5 days!  This is my breakfast today!  I get to chew again!!!  I did 5 days of juice and fruits and veggies and 5 days of only juice.  No FOOD!!  Now I am on to 5 days of food and juice again.

The juicing was hard over the weekend.  I have not been hungry at all!  It is the emotional hunger I talked about before.  I drank 5 juices each day with hot tea and coconut water.  I have not been doing the best with the coconut water so today I decided to add it in my juice!


Can you see what is wrong with this picture?  Look very closely at the top shelf.

Maybe this will help!  My daughter decided to make peanut butter balls yesterday.  Can you imagine not being able to eat anything for 5 days straight and walk in to fresh peanut butter balls?  Oh my will power was truly tested.  I did not however, eat one!!   I'm sure they will be gone by Friday, my last day of my reboot fast.  

A few other things I have learned while doing the fast-
  • I have so far lost 7 pounds
  • I am cold ALL the time!!!!!
  • One might need to get a fix by smelling best friends breath after they drink coffee. 
  • Garbage must be taken out DAILY!
  • Fresh beets don't look very good but one must not judge another by their looks.
  • Sometimes the best part of the juice is the bendy straw.
  • Just because you are drinking the juice doesn't mean food doesn't get stuck in your teeth.  Check a mirror.
  • The drinks have gotten better tasting and easier to drink since the first day.
  • Krogers carries Fennel but they call it Anise.
  • Mason jars are perfect for storing juices for the next day.
  • When on day 5 of juices only, one might find Cheetos in daughters room.  It is amazing how much of your face you can stick in a Cheetos bag to get a BIG sniff.
My friend B and Tommy started the juice fast with me.  B got VERY sick on day 1.  She had to detox the diet coke from her system.  She decided she could not drink the juices and decided to just eat clean now that she was detoxed.  Tommy is not only doing the juice fast with me but decided to quit smoking.  I am proud to say he has made it 10 days juicing and smoke free.  He also went through detox last weekend, day 1, 2 and 3.  He had flu like symptoms and a little crankiness too!  He has lost about 10 pounds and looks so  much healthier!  He has been very hungry during the last 5 days.  He has been such a trooper though.  We sure to laugh a lot and BOTH of us had our head stuck in that Cheetos bag taking a huge sniff!!! 

We have made it this far.  The next five days will be a breeze.

Things I have learned during my juice fast.


Starting day 3 with only juice.  This is todays menu.  Starting to look all the same isn't it?  I can be pretty sure that I will be drinking red or green juice!  Yesterday was a good juice day.  I liked all of them.  I am not a huge fan of green lemonade but made it through.  I didn't find myself physically hungry but I started to get emotionally hungry.  Do you know the difference?  

  • Physical hunger is hunger that happens below the neck.  Your belly growls and is ready for nourishment.
  • Emotional hunger is hunger that happens above the neck.  (craving for certain foods)
  • Physical hunger comes on gradually while Emotional hunger comes on suddenly.
  • Emotional hunger leaves guilt in it's wake while physical hunger does not.
I bought some sweet and salty cliff bars for my daughter's tennis teams lunches.  I accidently bought one too many and it is sitting on my kitchen table.  It is full of peanutty goodness.  It looks like dreamy goodness!  I stare at it.  It stares at me.  I walk away and it calls my name.  Stupid cliff bar!  How did it know my name?!

I didn't eat it!  I didn't.  I am hoping my daughter took it to school today.  Have you ever thrown good food away just so you won't eat it.  Yeah, me too.

Just in case you are thinking of doing a juice fast, here are some things I learned so far.

  • I have to go to the grocery store every two days.
  • I only walk over to the produce section and then to the registers.  I never visit any other part of the store.
  • Meijers has the best selection of the produce and fresh herbs that are not available anywhere else.
  • Aldies has the cheapest produce available but they don't carry everything I need.
  • I eat A LOT of spinach and kale.
  • Fennel bulbs smell and taste like licorice.
  • Coconut water is expensive and hard to find.  Mejer or Health food store.  
  • The "Mean Green Juice" taste just like fresh cut grass.
  • Pears do not last.  Juice them within a day of buying them.
  • If it goes in one color- it might come out the same color.
  • Who knew you could juice four cups of parsley.
  • Hot tea does help my coffee craving.
  • I LOVE coconut!  I heart it  on everything, in everything and around everything but I do NOT love coconut water.  It reminds me of snot.
  • Best to cut the fruit or veggie to fit through the juicer rather than thinking "it will fit".
  • A little ginger goes a loooooonnnnnnnnng way!!!!!!!!
  • I don't drink nearly as much water as I normally do.
  • I pee A LOT!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
  • Better to keep the "pusher" in place because fruits and veggies do jump out and try to escape.
  • Cleaning the juicer isn't hard but it is time consuming.
  • My side by side fridge is not nearly big enough to store two days worth of produce.
  • Produce that does not fit in fridge go in a cooler.
  • My energy level has NOT fallen!!!!
  • Celery wilts fast if not used.
  • Regular carrots taste better than baby carrots.
  • Juicing costs about 20 dollars a day.
  • I feel empowered with all the fresh produce around.
  • Who knew you could juice a sweet potato.
  • My tummy feels flat!!  
  • When rushing to pee, one must make sure toilet lid is all the way up.
  • Kale does not like to be juiced.
  • It is time consuming to make shop, clean,  cut, dice, juice everything.
  • It is worth it.



I am headed into the weekend of only drinking juice.  I will be headed to Fort Wayne tomorrow.  Someone told me, "There are a lot of great restaurants in Fort Wayne!"  Yeah well, I won't be able to discover that.  It's ok though.  I can do this!
